A Romantic 14th Seafood Recipe

Seafood Paella for 2
- 1 cup arborio rice
- 1 cup chicken broth
- 1 cup seafood broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 tbsp paprika
- 1/2 tbsp saffron threads
- 1 kg seafood (shrimp, scallops, and mussels)
- 1 lemon, sliced
- Salt and pepper to taste

In a large skillet, heat some oil over medium heat. Add the chopped onion and cook until soft and translucent, about 3 minutes.

Add the minced garlic and chopped red bell pepper to the skillet and cook for another minute.

Stir in the paprika and saffron threads and cook for another minute.

Add the arborio rice to the skillet and cook, stirring frequently, for 2-3 minutes.

Gradually add the chicken broth and seafood broth to the skillet, stirring constantly until all of the liquid has been absorbed by the rice.

Add the seafood (shrimp, scallops, and mussels) to the skillet and stir gently.

Squeeze some lemon juice over the top of the paella and season with salt and pepper to taste.

Cover the skillet with a lid and cook for 10-15 minutes, or until the seafood is cooked through and the rice is tender.

Serve the seafood paella in bowls with lemon slices on the side.
